If you've yet to hear of the tiny superfood that's sweeping the nation, you should definitely learn more about chia seeds. In just one ounce of chia seeds you'll not only find several vitamins to give you that extra boost to start the day, but you'll also find 4 grams of fiber and 11 grams of fiber per ounce. As chia seeds are a newly popular food, you'll find numerous experimental and delicious recipes out there that incorporate them. You can even use chia as a substitute for eggs when baking. Great Harvest in Kirkwood would like to help you introduce chia to your diet by providing you with one of the most delicious chia recipes.

What You'll Need:

Pudding-
2 ½ cups unsweetened or vanilla almond milk
½ cup of bing cherries-halved and pitted
½ tsp of ground cardamom
1 tsp Stevia, Splenda or honey
1 tsp of vanilla extract
½ cup of chia seeds

Creamy Cashew Sauce-
¼ cup cashews
¼ cup bing cherries
2 tbs of cold water
¼ tsp vanilla extract
⅛ tsp Stevia, Splenda or honey

Directions:

Blend almond milk, cherries, spices, and vanilla together in a blender
Pour the cherry mix over the chia seeds and whisk
Let it sit for 5 minutes and stir again, repeat after 10 more minutes
Cover and refrigerate overnight if possible
Soak cashews in water and refrigerate
For the cream, blend cherries
Drain and rinse cashews
Add cherries and water
Blend again, until cashews are smooth
Add vanilla extract and preferred sweetener
Stir and serve, topping with cream and more cherries

This recipe is versatile and you can substitute the cherries with another fruit, should you desire. Eat it for breakfast or as a healthy, sweet snack during the day.
