Oat and Wheat Bran Berry Muffins

Serves 4

Ingredients

  • 2/3 cup All purpose whole wheat flour
  • 2/3 cup Wheat Bran
  • 2/3 cup Oat Bran
  • ½ teaspoon Salt
  • 2 teaspoons Baking powder
  • 1 cup of Berries
  • 1 cup Coconut flakes
  • 2 tablespoons Coconut oil
  • ¼ teaspoon Cinnamon
  • 1 Egg or use ground flaxseed as an egg replacer*
  • ½ cup Chopped nuts, optional
  • 1 cup Almond milk
  • ¼ cup Honey
  • ¼ cup of brown sugar
  • ½ teaspoon of vanilla
*Ground Flaxseed egg replacer: One tablespoon of flaxseed mixed with three tablespoons of water. Let sit for 15 minutes until sticky. Refrigerate if necessary.

Preparation

  1. Preheat oven to 375 degrees.
  2. Mix flour, salt, brans, cinnamon, and baking powder in a bowl.
  3. Beat egg together with oil, sugar, honey and vanilla in a large bowl.
  4. Add mix in dry ingredients.
  5. Add and milk and mix well.
  6. Fold in berries and coconut flakes and mix gently.
  7. Scoop into greased muffin pan or use the paper muffin cups.
  8. Sprinkle nuts over the tops of the muffins.
  9. Bake for 20-25 minutes or until cooked through.
  10. Let sit for 15 minutes until cooled.
