Spring is known for many great things, but until the temperatures start to soar, you can always rely on one of the most common comfort foods: soup. Taking advantage of the things that each season provides is a great way to use the variety of vegetables available. Ingredients

½ cup chopped leeks
1 tablespoon olive oil
2 carrots, diced
2 stalks of celery, diced
2 chicken stock cubes
1 cup spinach, chopped
1 cup peas
Prosciutto slices
Kosher salt and ground pepper to taste

Preparation

Pour the olive oil in a large saucepan and set your stove on medium heat to saute the leeks and prosciutto. Meanwhile, add your stock cubes in a pan and add about 6 cups of boiling water and stir until the stock is dissolved. Now, pour your chicken stock in the saucepan, add the remaining ingredients and lower the heat.

To Finish

After simmering your soup for a few minutes, season with salt and pepper and garnish with a few leaves of fresh mint. Lastly, you can enjoy your soup with a slice of bread or salted crackers.

This soup is a great way to enjoy the chilly days of spring and make the most of them. Keep in mind that you can use any spring vegetables you want, as long as they pair with the other flavors, so don't be afraid to add the greens lingering in your refrigerator.
