Mexican food is delicious and one of its main characteristics is that it comes wrapped like tacos and burritos. However, there is a delicacy that's somehow neglected. We are talking about tamales. At Great Harvest in Kirkwood, we know you are always looking for new flavors, that's why we would like to share an easy way to prepare tamales at home.

Ingredients

This recipe requires to create 'masa' or dough which is very simple and you will need:
4 cups tamale Dough
4 cups chicken stock
1 teaspoon baking powder
1 teaspoon salt
½ cup butter

Don't forget that you will need corn husks to wrap your tamale, soak them in warm water for an hour. Remember that you can use your favorite filling, just be sure to prepare it in advance. A few suggestions are meat, beans, chicken or cheese.

The Dough

Combine the dough along the baking powder and salt, in the meantime heat the stock and beat the butter in your mixer. Stir in the mixer, a cup of the dough and a cup of the stock until the ingredients are completely blended.

Creating the Tamale

By now, your corn husks should be soft; place one on a flat surface and spread the mixture, be sure to leave space in the edges, as you will be wrapping the tamale. Add your filling, roll the husk and fold the edges. Use a husk strip to prevent your tamale from falling apart.

Steam

Put some water in a large saucepan, use a steamer to place your tamales and cover it. Use medium heat to cook the tamales and add water as it evaporates. This process should take about 50 minutes.

Tamales are delicious and fun to cook, plus you can involve your whole family in the process! Also, be sure to read this previous post on artisan bread.
