The following recipe serves 6, but you can easily adapt the measurements to suit your needs.


2 ½ cups blueberries (frozen ones work fine)
½ lemon (juiced)
1 cup brown sugar
6 tablespoons brown sugar
1 ¾ cups whole wheat pastry flour
5 tablespoons butter (cold, cubed)
1 tablespoon butter (melted)
1 cup milk
4 teaspoons baking powder
1 teaspoon vanilla extract
A pinch of ground cinnamon


Lightly grease a baking dish, wash and drain your blueberries and pour them into the dish, cover with the lemon juice and vanilla and sprinkle with one cup of sugar and half a teaspoon of flour. Stir through the tablespoon of melted butter then leave to one side to rest.

Stir together the flour, baking powder and brown sugar in a large bowl, then add the cubed butter. Mix together using the tips of your fingers until the mixture resembles rough breadcrumbs (leave some big chunks in there for a nice craggy cobbler). Form a well in the center of this mix, pour in the milk, then mix well. Cover and let it rest for ten minutes.

While the crumble mix rests, preheat your oven to 375 degrees Fahrenheit. Spoon the crumble mix over the blueberries, then sprinkle with the cinnamon and two teaspoons of brown sugar, then bake for 25 minutes. You'll know it's done to perfection when the top turns a delightful golden-brown. Serve in warmed bowls (with a scoop of ice cream if you're feeling decadent).
