As we're still enjoying, or enduring, the winter months, it is important to remember those things which keep us warm. We may choose to perfect making delicious eggnog or perhaps we're looking for something of the savory variety. It's good to appreciate the plethora of seasonal vegetables we've got available to us during the winter and it is with those hearty treats in mind that Great Harvest in Kirkwood would like to share this recipe for winter vegetable soup. 

This soup is rather hearty and delicious and for that reason you're going to need a lot of ingredients:
¼ cup of olive oil
8 ounces, halved and sliced, of crimini mushrooms
2 medium sized carrots (diced)
2 celery sticks (sliced thinly)
1 large onion (finely diced)
1 tablespoon of salt
1 35-ounce can of whole peeled tomatoes
2 teaspoons of chopped sage leaves
1 teaspoon of chopped rosemary
4 cloves of minced garlic
2 ½ quarts of water
3 tablespoons of soy sauce
One piece of Parmesan rind
7 ounces of butternut squash
5 ounces of kale
Two 15-ounce cans of beans (preferably white)
2 tablespoons of red wine vinegar
Shredded Parmesan for serving

After gathering all of the delicious ingredients, here's how you'll make it: 
  • Using 2 tablespoons of olive oil, saute the mushrooms until they're brown.
  • Remove the mushrooms and set them aside.
  • Decrease the heat, add 2 more tablespoons of olive oil and cook the carrots, onions, and celery with olive oil and salt-cook until soft (this should take about 30 minutes), stirring occasionally.
  • Add the tomatoes, rosemary, sage and garlic, and cook for a further 5 minutes.
  • Add the water, soy sauce and parmesan rind, increase the heat, and bring to a boil.
  • Add the squash and kale, decrease the heat, cover, and cook for a further 30 minutes.
  • Return the mushrooms to the pot, add the beans and red wine vinegar, and cook for around 15 minutes.
  • Remove the parmesan rind.
  • Serve in warm bowls and  season with salt, pepper and shredded parmesan.
